The wine is straw yellow in colour with a subtle shade of pink

This has a lovely depth of colour and a restrained and concentrated nose with perfumes of fresh and dried cherries

Crisp Mineral Finish

the blend is fermented naturally in concrete tanks and old wooden fermenters using a hands-off approach in the cellar

Whole bunches were pressed and co-fermented and after some time in stainless steel the juice was transferred to an old oak barrel where it underwent patient malolactic fermentation before resting for a number of months under a veil of flor (naturally developing layer of yeast)
